This wine is produced in an already rare and very traditional manner. The grapes are manually harvested and are then pressed with the feet and left in contact with their skin for a long period to extract all the complexity of the fruits and aromas. Full fermentation is made in the mills of the estate’s cellar, followed by a 12-month stage in French oak barrels and another 12 months in the bottle.

The Estate’s low-productivity old vineyards lead to a structured, intense and complex Castelão, that has developed, thanks to the above-mentioned long stage in bottle, tobacco, coffee and dark chocolate aromas. The prominent tannins and good acidity are also evident, revealing the rustic and typical aspect of the variety, with an excellent ageing capacity.

The manually harvested grapes are then subject to a 2-hour maceration. They are then pressed, and they ferment without any contact with the skins in stainless steel deposits with a controlled temperature of 14º C.
